Chicken or Turkey Croquettes

Chicken croquettes are made with chicken and minced onions and parsley, and deep fried.
Ingredients
- Thick White Sauce:
- 3 tablespoons shortening or butter (or even chicken fat)
- 1/3 cup flour
- 1 teaspoon salt
- 1 cup milk
- .........................
- 2 cups finely chopped cooked chicken (I sometimes add leftover stuffing or vegetables.)
- 1 tablespoon minced onion
- 2 tablespoons minced parsley
- 2 eggs
- 2 tablespoons lemon juice
- 1/3 cup fine dry bread crumbs, unseasoned
Preparation
Step 1
In a saucepan, melt shortening or butter; blend in flour and salt. Add milk, stirring. Cook over low heat, stirring constantly, until thickened.
Add chicken, onion and parsley; spread in a greased shallow pan and chill thoroughly - overnight, if possible.
Whisk together eggs and lemon juice. Form chilled chicken mixture into 8 logs; dip each into egg mixture, then coat with crumbs. Dip into egg mixture again and coat with crumbs again. Refrigerate at least one hour.
Heat deep fat to 375°; fry croquettes for about 5 minutes each, or until golden brown. Drain on paper towels. Chicken croquettes serves 4.
Serve with chicken or turkey gravy. Homemade cranberry sauce is delicious with croquettes!

REVIEW:
I fry foods in deep-fat only once in a blue moon...my husband is the fry cook. But I do get a yen for these chicken croquettes sometimes, and when I do I never hear any complaints from my husband or family. This is a delicious recipe that I follow exactly.
