Ingredients

  • 1 tbs butter
  • 1 1/2 tsp olive oil
  • 1/2 pound sweet onions sliced thin
  • 1/4 # leeks (white only) sliced thin
  • 1 clove garlic minced
  • 1/4 tsp sugar
  • 1 1/2 tbs flous
  • 4 cups beef broth
  • 1/4 c vermouth
  • dash of tabasco
  • salt
  • pepper
  • toasted french bread slices
  • sliced gruyere

Preparation

Step 1

Melt butter with oil in heavy pot over low heat. Add onions and leeks and garlic and cook until onions soften about 15 min. Increase heat to med low add sugar and cook until onions are golden, about 30 min.
Add flour and stir 3 min.
Add broth, vermouth, tabasco and pepper. Simmer 40 minutes and season with salt.
Preheat broiler, Divide soup into crocks, top with bread and cheese and broil until cheese melts.
