  • 2 cups cubed watermelon
  • 1/2 cup jicama thinly sliced into 2-inch strips
  • 1/4 cup crumbled reduced-fat feta cheese
  • 1/8 tsp. black pepper (freshly ground, if available)
  • 1 tbsp. balsamic vinegar
  • 1/2 tsp. extra-virgin olive oil
  • 2 tbsp. chopped basil

Step 1

Place watermelon and jicama in a wide, shallow bowl. Toss gently to mix.

Sprinkle with feta cheese and black pepper, drizzle with vinegar and olive oil, and top with basil!
