Ingredients
- 1 whole garlic bulb
- Large cookie sheet of chopped potatoes. Chiles, salt and pepper, fresh rosemary, olive oil.
- Dressing: roasted garlic pureed, 1 tsp chiles, 1 tsp cumin, 2 cups yogurt, 2 tbsp buttermilk, chopped green onions, pepper(mix and leave overnight to get good garlic flavour)

Step 1
Roast whole garlic head in oven until soft . Puree
Roast potatoes on parchment with condiments. Drizzle with olive oil.
Dressing Mix together and refrigerate over night. Add to roasted potatoes and serve with Bison Short Ribs or Pork Baby Back Ribs.
