Sausage and Gnocchi Soup

Ingredients
- 1 t olive oil
- 1 c chopped onion
- 9-10 oz sausage, sliced
- 2 garlic cloves, minced
- 2 c water
- 2 c lower fat, lower sodium chicken broth
- 1 16 oz pkg gnocchi
- 1 14.5 o can fire roasted diced tomatoes
- 1 6 oz pkg fresh spinach
- 1 oz shredded Parmesan (about 1/4 c)

Preparation
Step 1
1. Heat oil in large Dutch oven. Add onion and sausage and saute until onion is tender and sausage is browned. Add garlic - saute 1 minute.
2. Add water and next 3 ingredients. Bring to boil. Reduce heat, and simmer 3 minutes or until gnocchi float to top of pan. Remove from heat, add spinach, stirring until spinach melts. Ladle into bowls and sprinkle with Parmesan. 8 servings (about 1 cup) 185 calories, 11 grams protein.
