Ingredients

  • 150 grams lemongrass (serai) pounded to release the flavour
  • 5 pandan (screwpine) leaves tied in a knot
  • 5 slices ginger
  • 1.8 litres water
  • 40 grams rock sugar or honey rock sugar to taste

My mum treated me to a spa session and they served a home-made lemongrass herbal tea after the massage. It was so refreshingly healthy that I could not resist making the drink at home. Lemongrass is a detoxifying ingredient so this is really beneficial especially after prolonged periods of pigging out. It also aids digestion, combat heat, is a natural remedy for fever, anti-inflamatory & anti-cancer, among a host of other health benefits. If you can find pandan (screwpine pines) in your area, brew them with lemongrass for an unbeatable fragrance. Ginger is added for a slight spiced taste and to get rid of excess “wind” in the tummy.

In a pot, add the ingredients except rock sugar. Bring to a boil, reduce heat and simmer for about 20-30 minutes.

Add rock sugar and stir until dissolved. Discard lemongrass stalks, ginger and pandan. Drink warm or chilled.

I have made this drink a few times. Smash some sugarcane and add into it makes it naturally sweeter. I got inspired after trying this drink at a nyonya restaurant.

Hi SC, don’t need to strain. How long did you simmer? My guess is that the water is too reduced, maybe due to high heat (just need a gentle simmer). If that happens again, add some hot water to thin the drink.

Using sugarcane will definitely make it murky and not clear like Wiffy’s. My colleague’s mum uses honey in this drink instead of rock sugar.
