Ingredients
- 4 large egg whites
- 1 tablespoon water
- 1 scallion, chopped
- 1/8 teaspoon black pepper
- 1 teaspoon unsalted butter
- 1 ounce(about 3 slices) smoked salmon
- 1 tablespoon fat-free sour cream
- 1 teaspoon drained capers, chopped
- Chopped fresh dill
Preparation
Step 1
1. Whisk egg whites and water in medium bowl until frothy. Whisk in scallion and pepper.
2. Melt butter in small nonstick skillet over medium heat, swirling butter to coat pan. Pour in egg mixture and cook, stirring gently, until underside is set, 1-2 minutes. Top one half of omelette with salmon, sour cream, and capers; fold other half over filling. Cook until eggs are set, 1-2 minutes. Slide omelette onto plate and sprinkle with dill.
