Ingredients

  • 18 wings (36 pieces)
  • Walkerwood Jerk marianade 4 oz (1/2 cup)
  • Soy sauce 4 oz
  • dried sage 1 tsp
  • ground cloves 1 tsp
  • ground ginger 1 tsp
  • ground cinnamon 1 tsp
  • ground allspice 1 tsp
  • tap water circa 8 oz

Preparation

Step 1

mix marianade together
divide chicken pieces into 2 plastic Ziplock bags
pour half of marianade into each bag and marianate for 4 to 8 hours,
then freeze (need not be frozen any set time)
allow to defrost
arrange wings on baking sheets, cover with foil, bake at 275 degrees for 55 minutes
uncover and put under broiler for 4 minutes
ALTERNATIVE METHOD:
Braise in a dutch oven for 1 hour at 250 degrees and then cook on hard wood charcoal grill by indirect heat for 15 minutes
