Vanilla Wafer Cookies

Use pasteurized eggs for making cookie dough ice cream.
The dough freezes well; simply roll into a log and wrap in plastic wrap. Then just slice off cookies and bake (from frozen) according to directions.

Ingredients

  • 1/3 cup butter (no substitutes)
  • 1 cup sugar
  • 1 egg
  • 1 vanilla bean, split and scraped (or, 1 tablespoon vanilla extract)
  • 1 1/4 cups all-purpose flour
  • 2 TBLS Coconut Flour
  • 3/4 teaspoon baking powder, aluminum free
  • 1/4 teaspoon salt

Preparation

Step 1

1 Preheat oven to 350 degrees F.
2 In a mixing bowl (or your stand mixer), cream butter and sugar together until the mixture is light and fluffy looking.
3 Beat in egg and vanilla.
4 Combine dry ingredients in a separate bowl and slowly add to creamed mixture and mix well.
5 Drop by teaspoonfuls 2 inches apart onto ungreased baking sheets.
6 Bake at 350 for 12 -15 minutes or until edges are golden brown.
7 Cool on a wire rack. 8 These stay pretty pale and chewy.
