Lemon Cupcakes

Ingredients

  • 1.5 cups cake flour
  • 1.5 cups flour
  • 2 cups sugar
  • 1 tbsp baking powder
  • 3/4 tsp salt
  • 2 sticks butter, room temp, in pieces
  • 4 eggs
  • 1 cup milk
  • 1 tsp vanilla
  • 1/4 cup lemon juice
  • 2 tbsp lemon zest

Preparation

Step 1

Preheat oven to 350.
Mix together in mixer bowl flours, sugar, baking powder, and salt. Blend slightly. Add butter in chunks, mixing well until combined. In small bowl, beat eggs, milk and vanilla. Add wet to dry, mix until just combined. Add lemon juice and zest at the end, mix until just combined.
Scoop into cupcake pans, 3/4 full. Bake 15-18 minutes.
