Ingredients
- Prepare firm, tart apples by peeling an slicing as you would for a regular pie. Arrange in large pie plates. Use enough apples to fill.

- 2 eggs
- 1 cup sugar
- 2 tablespoons melted butter
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla

Beat eggs and flour together. Add melted butter. Beat well. Fold in flour, baking powder and salt. Add vanilla. Spread mixture over apples and bake in 350 degree oven until apples are done and top is crisp, about 45 minutes.
