Ingredients
- 3 small sweet peppers (multicolor), diced
- 1 small red onion, diced
- 1/2 roasted chicken breast, diced
- 1/4 cup fresh salsa
- 1/2 cup black beans
- Sliced black olives, to taste
- Sliced jalapeño peppers, to taste
- 3 small tomatoes, diced
- 1/2 cup of nonfat Greek yogurt
- 1 low-carb flour tortilla, optional
Preparation
Step 1
Sauté the peppers and onion in a large skillet for several minutes.
Add the chicken and sauté until warm and brown. Pour the mixture on a plate.
Microwave the salsa for a few seconds and then pour it on top of the chicken and veggies, followed by the beans, olives, jalapeños, and tomatoes. Top with the yogurt (a great substitute for sour cream).
If using the tortilla, lightly mist it with olive oil and sauté in the skillet until brown on each side. Break it apart (into cracker-like pieces) and add it to the dish.
