Ingredients

  • Cake:
  • Red Velvet Cake Mix
  • 4 eggs
  • 1/2 cup oil
  • 1 cup water
  • Icing:
  • 1 (8 ounce) package cream cheese, softened
  • 1 stick margarine, softened
  • 4 cups powdered sugar
  • 1 cup marshmallow creme
  • 1 teaspoon vanilla

Preparation

Step 1

Cake:
Preheat oven to 350 degrees. Combine cake mix, eggs, oil, and water. Beat 30 seconds on low speed. Beat another 1 1/2 to 2 minutes on medium speed. Pour into two 9" greased and floured cake pans. Bake 27 minutes or until toothpick inserted in center comes out clean. Cool.


Icing:
Beat cream cheese and margarine until well blended. Gradually, add powdered sugar until smooth. Add vanilla and marshmallow creme. Frost. cooled layers. Refrigerate.

Variation: Sprinkle top of cake with flaked coconut.
