Ingredients

  • 6 ripe tomatoes
  • 1 cup of cooked quinoa
  • 1 bunch of scallions
  • 1 small or 1/2 large bunch of dill
  • 4-6 tbsp of fresh olives or capers
  • Juice of 1/2 lime or 1 lemon
  • freshly ground black pepper

Preparation

Step 1

Cut off a thin slice from each tomato top. Scoop out the seeds and the pulp and transfer to a bowl. Discard the harder parts of the tomato core.
In the bowl, combine the tomato pulp/seeds with cooked quinoa, capers/olives, chopped dill and scallions. Add lime/lemon juice and mix well
Fill up the hollowed out tomatoes with the quinoa mixture
Grind some fresh black pepper on top and enjoy!

Tip: you can use any tomato variety although the juicier and medium-sized ones such as slicer or heirloom tomatoes would work best.
