TORTILLA LASAGNE

Ingredients

  • 1 1/2 lbs ground beef
  • 1/2 cup diced onion
  • 750 mL tomato/pasta sauce
  • 1 1/2 cups salsa
  • 1 can tomato paste
  • 1 clove garlic, minced
  • 1 tsp onion powder
  • 1 cup ricotta cheese
  • 1 egg
  • 1 can diced green chilies
  • 3 cups shredded Mexican style cheese (Cheddar and Monterey Jack mixed)
  • 6 10” 25cm soft flour tortillas, cut into 2 x 5 “ strips

TORTILLA LASAGNE

In large skillet, brown beef and onions; drain and rinse. Add tomato/pasta sauce, salsa, tomato paste, garlic and onion powder. Bring to boil; reduce heat. Simmer, uncovered 20 minutes.

In small bowl, combine ricotta cheese, egg and chilies; set aside.

In greased 13 x 9 “ baking pan, spread 1 cup sauce mixture over bottom. Layer 1/3 of the tortilla pieces, 1/3 of the sauce, ½ of the ricotta mixture and 1/3 of the cheese. Repeat layers. Repeat layers. Top with the remaining tortilla, sauce and cheese.

Bake uncovered at 375oF 30 minutes or until hot and bubbly. Serves 8.
