Ground Beef Vegetable Soup

Ingredients

  • 3/4 # ground beef
  • 2 cans beef broth
  • 2 c. water
  • 1 can (28oz) diced tomatoes, undrained
  • 3 celery ribs, chopped
  • 2 large carrots sliced
  • 2 medium onions sliced
  • 1 medium potato, peeled and cubed
  • 1-1/2 c. fresh cauliflowerets
  • 2 tsp dried tarragon
  • 1 tsp garlic powder
  • 1 tbsp minced fresh parsley
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 3/4 c. uncooked macaroni

Step 1

In a dutch oven, cook meat over medium heat until no longer pink. Drain. Add the broth, water, tomatoes, celery, carrots, onions, potato, cauliflower, tarragon, garlic, parsley, salt and pepper. Bring to a boil, reduce heat, cover and simmer for 30 min. until veg. are tender, stirring occasionally. Cook macaroni according to pkg directions, drain. Stir into soup, heat trough.
