Ingredients

  • 4

    quarts sliced medium cucumbers

  • 6

    medium white onions, sliced

  • 2

    green peppers, chopped

  • 3

    cloves garlic

  • 1/3

    cup coarse-medium salt

  • 5

    cups sugar

  • 3

    cups cider vinegar

  • 1 1/2

    teaspoon turmeric

  • 1 1/2

    teaspoon celery seed

  • 2

    Tablespoons mustard seed

  • 1/2

    teaspoon ground cloves.

Directions

Combine cucumbers, onions, peppers and garlic in large bowl and add salt. Cover with cracked ice, mix and let stand 3 hours then drain. In large saucepan, combine sugar, vinegar, turmeric, celery seed, mustard seed and cloves and bring to boil. Add cucumber mixture. Remove from heat shortly before the combined mixtures returns to boil. Pour into hot sterilized jars. Process 10 minutes in hot water bath.
