Roasted Fresh Tomato Sauce

Ingredients

  • 4 lbs ripe plum tomatoes
  • 1 medium onion coarsely chopped (about 1 cup)
  • 8-10 garlic cloves, peeled
  • 2 T olive oil
  • salt and pepper to taste
  • 2 T chopped fresh herbs (basil, oregano, parsley, rosemary)

Preparation

Step 1

Preheat oven to 400. Cut the tomatoes into quarters and arrange them in a single layer in a shallow roasting pan. Sprinkle the onion and garlic around the tomatoes, and drizzle the oil over the vegetables. Roast for 50-60 minutes or until the tomatoes are lightly browned and the garlic is tender when pierced with a knife.

Transfer in batches to a food processor and coarsely chop or puree until fine. Add salt and pepper to taste, and the chopped herbs.
