Ingredients
- Marinade:
- One 2" piece peeled ginger
- 4 large cloves garlic
- 1/4 t tumeric
- 1 t chili powder
- 1 1/2 t kosher salt
- 1/2 t ground cumin
- 3/4 C plain yogurt
- 1 T fresh lime juice
- 2-3 lb. boneless, skinless chicken breasts
- 1/4 C olive oil
- Garnish:
- 1 mild onion, thinly sliced
- 1/2 C chopped cilantro
- 1 jalapeno, thinly sliced
- 1 lime, cut in wedges
Preparation
Step 1
Make marinade in processor by blending ginger & garlic to a fine paste using a little water. Add turmeric, chili powder, salt, cumin, yogurt, lime juice. Process til combined.
Make a few slits in each piece of chicken so it lies flat. Pour marinade over chicken and stir to coat. Marinate 4-12 hrs.
Grill chicken, basting with marinade, @ 5 min per side.
Transfer chicken to platter. Arrange onion, cilantro, jalapenos & lime wedges over chicken. Seal with foil & let sit for 10 min. before serving.
