Ingredients

  • 2 medium-sized zucchini, sliced
  • 2 medium-sized summer squash, sliced
  • 2 medium-sized onions, peeled and sliced
  • 2 tomatoes, quartered
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/2 cup green or black olives
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

Step 1

In a large skillet or wok, combine all ingredients.

Cook over medium heat, stirring occasionally, for about 20 minutes or until zucchini and summer squash are tender.
