Rainbow Cupcakes

Ingredients

  • 3 cups flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 tbsp vanilla
  • 1 c milk
  • 2 sticks unsalted butter, room temp
  • 1 3/4 c sugar
  • 5 egg whites, room temp
  • food colors in 4-5 colors

Preparation

Step 1

Preheat oven to 350.
Whisk together flour, baking powder and salt. Stir vanilla into milk.
Cream butter until fluffy, Add sugar, beat well. Add egg whites, a bit at a time, beating well after each. Add flour mix, alternating with milk, mixing well in between.
Divide batter equally into bowls. Add food coloring to each, mix well.
Spoon 1 tbsp of each color into cupcake pans, layering all colors randomly.
Bake 15-18 minutes.
