Lemon Grilled Chicken

Ingredients

  • 2 - 2 1/2 chicken breast
  • 1/2 cup white wine
  • 2 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 teaspoons rosemary
  • 1 tablespoon shredded lemon peel

Step 1

Skin chicken, rinse, pat dry. Place in plastic bag & set in shallow dish. For marinade, in blender, combine wine, oil, garlic, rosemary, lemon peel, salt, & pepper. Cover & blend till well mixed. Pour over chicken in bag. Close bag, Marinate in refrigerator for 6+ hours or overnight - turn bag occasionally. Drain chicken, reserving marinade. Place chicken, bone side up, on the rack of an uncovered grill. Grill directly over medium coals/heat for 35-45 minutes or until chicken is tender and no longer pink - turning once and brushing w/ marinade half-way through grilling. Discard any remaining marinade.
