  • 4 -6 boneless chicken breasts, pound it out to make thin
  • 1 pkg frozen chopped spinach
  • 1/4 cup fresh parmesan cheese
  • 2 Tbl. Parmesan cheese blend (fontina,asiago & Romano cheese)
  • 1/4 cup olive oil
  • 1/4 tsp salt and pepper (or to taste)
  • 8 oz cream cheese

Step 1

In the food processor combine spinach, olive oil, salt and pepper, cream cheese and parmesan cheese.

Preheat oven to 400 degrees you will cook for 30 min.

sauté one side until brown (I used a little bacon grease)

With raw side up spoon spinach mixture in center of chicken and roll it up, or fold it in half
Place in pan with seam side down and repeat till all filling is gone.

Lightly salt and pepper top of chicken

Bake for 30 min. When done top with a little cheese blend
