  • 3 cups old fashioned oats (gluten-free certified if you need it)
  • 1/2 cup pecans halves and pieces
  • 1/2 cup whole almonds, roughly chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 very ripe Dole bananas
  • 1/4 cup coconut oil, room temperature
  • 1/4 cup pure maple syrup
  • 2 teaspoons vanilla

Preparation

Step 1

1.Preheat oven to 350 degrees then line a large baking sheet with a silpat or parchment paper. Combine oats, nuts, salt, and cinnamon in a large bowl then stir to combine and set aside.
2.In a separate bowl, mash bananas until completely smooth and liquidy then stir in coconut oil, maple syrup, and vanilla. Pour into oat mixture then mix with a spatula until coated. Spread out on prepared baking sheet then bake for 15-20 minutes or until golden brown, stirring twice. Cool granola completely on baking sheet – it will crisp as it cools. Store in an airtight container at room temperature for 3-4 days.
