Cranberry and Cilantro Quinoa Salad

Ingredients
- 3 cups water
- 2 cups uncooked quinoa
- 1/2 cup chopped yellow pepper
- 1/2 cup chopped red pepper
- 2 small red onions chopped
- 3 tsp curry powder
- 1/2 cup chopped fresh cilantro
- 2 limes
- 1/2 cup toasted sliced almonds
- 1 cup minced carrots
- 1 cup dried cranberries
- salt and pepper to taste

Step 1
1. Pour water into a saucepan and cover with a lid. Bring to a boil over high heat, then pour in the quinoa and continue to simmer over low heat until the water has been absorbed. About 15-20 minutes. Scrape into a mixing bowl and chill in the fridge until cold
2. Once cold stir in the peppers, red onion, curry, cilantro, lime juice, sliced almonds, carrots and cranberries.
Season to taste with salt and pepper
Chill before serving
