Filet Mignon w/ Gorganzola Sauce

Ingredients

  • Gorgonzola Sauce:
  • 1 lb. filet mignon
  • 4 oz. gorgonzola cheese
  • 2-3 tablespoons olive oil
  • 2 tablespoons garlic pepper
  • 2 tablespoons olive oil
  • 4 oz. mushrooms, cleaned & sliced
  • 4 oz gorgonzola cheese
  • 2 tablespoons ground minced onions
  • 1/2 cup whipping cream
  • 1 teaspoon garlic pepper

Preparation

Step 1

Slice an opening lengthwise in the filet and stuff evenly with the cheese. Brush olive oil on the meat and press garlic pepper into the meat. In a skillet on high heat, sear the outside of the meat on all sides. Place meat in a baking dish and finish cooking in the oven to desired doneness. Plate meat & top with gorgonzola sauce.

Gorgonzola Sauce:
Sauté mushrooms in olive oil over medium high heat, 3-5 minutes. Add cream, cheese and garlic pepper, stirring until the sauce just vigorously boils.
