  • 4 large eggs
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 can pumpkin puree -- 16 oz.
  • 2 cups flour
  • 3/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 3/4 cup raisins
  • 3/4 cup chopped walnuts

Preheat oven to 350 . Grease a 9 x 13 pan. In a large mixing bowl, beat the eggs until light and lemon colored ( if using an electric mixer, start on low speed and end on high). Gradually beat in the sugar. Add the vegetable oil in a thin stream, beating all the while. Blend in pumpkin puree.
Measure 2 cups flour and then sift it. Combine it with the salt, baking powder, baking soda, and spices. Blend the dry ingredients into the pumpkin mixture, a half cup at a time. Stir in raisins.
Pour and scrape the mixture into the prepared pan. Bake 45 to 50 minutes. Cool in the pan, set on a wire rack. Frost with GINGER CREAM FROSTING. Sprinkle with walnuts.
