Ingredients

  • 1 egg white
  • 1/2 tsp. salt
  • 1/4 c. granulated sugar
  • 1 c. cornflakes
  • 1 c. chopped candied cherries
  • 1/4 c. chopped pecans
  • 2 tbsp. fine coconut
  • 1/2 tsp. vanilla
  • 1/4 tsp. almond flavouring

Preparation

Step 1

Sprinkle salt over egg white and beat until verry stiff. Add sugar gradually beating well after each addition. Fold in the cornflakes, pecans and coconut. Blend in flavourings. With wet fingers, pick up about 1 tbsp. and shape into a log. Arrange on a well greased sheet.

Bake at 350 F for about 30 minutes. Let stand a minute or two then ease off baking sheet with spatula. Cool on wire rack.
