Makes:
Set a heavy bottomed, non-reactive saucepan over medium heat
Add 3 ounces chocolate, the heavy cream, corn syrup and brown sugar — when mixture is melted and smooth, whisk in the cocoa
Remove from heat, and immediately stir in the remaining 3 ounces chocolate and 2 tablespoons butter, stirring until smooth
Finally, stir in the vanilla extract
Hot fudge can be kept in a sealed container in the fridge for up to 1 week — to reheat, microwave fudge on low for 10-20 seconds
