- 2 Tbs. butter
- 3 lb. yellow squash, small chop
- 2 onions, chopped
- 1 c. mayo
- 1 c. shredded Cheddar
- 3 eggs, beaten
- 1 tsp. salt
- 1 (1 oz.) pkg. dry ranch dressing mix
- 2 c. dry bread stuffing
- 1/2 c. melted butter
Saute onion and squash in melted butter until tender. Remove from heat. Stir in all other ingredients except the stuffing and butter.
Put in medium baking dish. Mix stuffing (or panko) with 1/2 c. melted butter and top the squash.
Bake 20-30 minutes until firm and brown.
