Coco-Nutty Granola

Ingredients

  • 4-1/2 cups Rolled Oats
  • 1 cup Sliced Almonds
  • 1/2 cup Slivered Almonds, lightly chopped
  • 1 cup Unsweetened Grated Coconut
  • 1 tbsp Cinnamon
  • 1 tsp Ginger, powdered
  • 1/2 cup Honey
  • 1/4 cup Organic Blue Agave Sweetener
  • 1/4 cup Coconut Syrup
  • 1/2 cup Coconut Oil, melted
  • Add-ins optional; dried cherries, raisins, dates, any dried fruits

Preparation

Step 1

Preheat the oven to 325 degrees.
Line a large cookie sheet with parchment paper.

Mix the oats, almonds, coconut and spices in a large bowl. Stir until well blended.

In a small saucepan, mix the honey coconut oil, agave sweetener and coconut syrup. On low heat, mix everything together until just melted. Don't boil or overheat.

Pour the liquid mixture over the oat mixture and mix well with two spatulas, like you are tossing a salad.

Spread the mixture over the cookie sheet, making sure it is all even.

Put into the oven and set the timer for 10-12 minutes.

Remove from the oven. With a large spatula, push all of the granola into the center. The edges brown the most and you want to get them mixed into the center.

Using the spatula, start scooping from the center and spread the granola out to the edges. Do this every time you take the granola out. This will help the granola brown evenly.

After about 30 minutes, granola should be ready. If you like your granola darker and crispier, put it back in the oven and give it a few more minutes.

Let cool completely. It becomes crispy as it cools.

Store in an airtight container or bag.
