STEAMED CHOCOLATE PUDDING (Five Roses)

Ingredients

  • ¾ cup of flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ teaspoon clou de girofle
  • 1 ½ unsweetened chocolate square
  • 2 teaspoons of butter
  • 3 eggs (whites and yellows separated)
  • ¾ cup of sugar
  • ½ cup of milk
  • 1 teaspoon of vanilla
  • ¼ cup of slivered almonds (optional)

Preparation

Step 1

1. Mix first 5 ingredients.
2. Melt chocolate and butter. Cool.
3. Whip yellows to a slight mousse. Add sugar and keep beating.
4. Add chocolate to yellow mixture.
5. Add dry ingredients, alternating with the milk, beating well after each addition.
6. Add vanilla.
7. Whip the whites to peaks and incorporate to dough.
8. Add almonds if necessary.
9. Pour in a greased 2 pints mold. Cover.
10. Steam for 1-½ hours.
11. Serve warm with vanilla sauce.
