Red Beans & Rice

Ingredients

  • 1 1/2 C. regular long grain rice
  • 1 large onion
  • 1 large green pepper
  • 3/4 t. cajun seasoning
  • 2 (16oz) small red or pink beans
  • 1 jalapeno pepper for garnish if desired

Preparation

Step 1

Prepare rice as label directs. Dice onion and green peppers. In large saucepan cook onion and pepper in little oil or water until tender, about 15 minutes. Stir in Cajun seasoning; cook 1 minute longer. Add beans with their liquid and 1/2 cup water to the onion mixture in saucepan; over high heat, heat to boiling. Reduce heat to low; cover and simmer 5 minutes, stirring occasionally to heat beans through and blend flavors.

To serve, spoon rice on large platter; spoon bean mixture on top of rice; garnish with hot pepper if desired.
