Salsa Chicken Fiesta

Ingredients

  • 2/3 C. Bisquick
  • 2 T. water
  • 1 egg
  • 1 1/4 C. Old el Paso thick chunky salsa
  • 1 1/2 C. shredded cheddar cheese
  • 2 t. oil
  • 3 boneless cooked chicken breast, cut into 1/2" pieces

Preparation

Step 1

Mix Bisquick, water and egg. Spread in pan. Sprinkle with 1 1/4 C. cheese. Heat chicken and salsa until hot. Spoon over batter within 1/2" of edge. Bake 22 to 25 minutes or until golden brown. Sprinkle with rest of cheese. Bake 1 to 3 minutes or until cheese is melted.
