SALMON****Chili Salmon

Ingredients

  • 1 Salmon Filet, skinless preferred, skin-on works too, from Costco
  • Salt and Freshly Ground Pepper
  • 1 teaspoon Chili Powder
  • 2 teaspoons EVOO

Preparation

Step 1

*Preheat* stainless-steel to medium-high, and season lightly with olive oil. *Rinse* salmon and pat dry. *Sprinkle* 1/2 teaspoon chili powder (or even more on mine) over each of the salmon filets. *Season* with salt and pepper, and place, skin-side down in hot pan. *After* 3 minutes, flip, add a couple of tablespoons white wine or water to the pan, if desired (I don't find it necessary) and cover and continue to cook on other side for an additional 2 to 3 minutes, or until just cooked. *DON'T OVERCOOK*

*Serve* Dan's with tartar sauce. *I* was happy with plain lemon but a yogurt-based dill sauce or a mango salsa would both be good.
