Ingredients

  • Dressing:
  • 3 cups shredded carrots
  • 2 cups broccoli slaw or finely julienned broccoli stalks
  • 2 cups mung been shoots
  • 1 large cucumber peeled, seeded & julienned
  • 2 cups (2 bunches) fresh cilantro, chopped finely
  • 1 bunch of green onions, sliced finely
  • ~1/2 cup freshly squeezed lime juice
  • 3 Tbs. cold pressed sesame oil
  • 2 Tbs. agave nectar or maple syrup
  • 1 Tbs. apple cider vinegar
  • 2 tsp. soy sauce
  • 1/4 tsp. ground pepper
  • 1/2 tsp. sea salt
  • 2 Tbs. fresh minced serrano chili (or to taste)
  • 3-4 tsp. freshly minced garlic

Step 1

1. Toss all the vegetables together with cilantro.
2. Place all the dressing ingredients except the chilli and garlic in blender and pulse a few times until well combined; stir in the garlic and chilli.
3. Pour dressing over salad and season to taste; garnish with sesame seeds or chopped raw nuts if desired.
