White Beans with Tomato, Basil and Parmesan

Ingredients

  • 1 T. olive oil
  • 1 t. minced garlic
  • 1 (24oz) jar Great Northern Beans, rinsed and drained
  • 1 large ripe tomato, chopped
  • 1/4 C. fresh minced parsley (optional)
  • 1 t. basil
  • 1/2 C. Parmesan cheese
  • 1 T. lemon juice

Preparation

Step 1

In 12" skillet, saute oil and garlic over medium heat for 3 minutes. Stir in the beans, chopped tomato, and spices. Cook about 7 minutes longer. Mix in the cheese and lemon juice just before serving.
