Dill Pickles (not tried yet)

Ingredients

  • add to each jar:
  • 8 lb. 4-6" cukes, cut lengthwise into halves
  • 3/4 cup sugar
  • 1/2 cup canning salt
  • 1 qt. vinegar
  • 1 qt. water
  • Green or dry dill (1 head per jar)
  • 1 bay leaf
  • 1 clove garlic
  • 1 piece hot red pepper
  • 1/2 tea. mustard seed

Preparation

Step 1

Wash cucumbers, drain.

Combine sugar, salt, vinegar and water in a large saucepot.

Pack cucumbers into hot jars, leaving 1/4" headspace; put one head of dill, bay leaf, garlic, pepper and mustard seed in each jar. Ladle hot liquid over cucumbers, leaving 1/4" headspace. Remove air bubbles.

Adjust lids. Process in boiling water canner for 15 minutes.
