Clam-stuffed Mushrooms

Ingredients

  • 1 1/2 lbs large fresh mushrooms
  • 1 tsp ground garlic
  • 1/2 cp butter or margarine, melted
  • 2 6 oz cans of chopped claims in juice, not drained
  • 1 cp Italian seasoned breadcrumbs
  • 1/4 cp parsley flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation

Step 1

1. Remove stems from mushrooms & chop
2. Cook stems in a medium saucepan on medium
heat in the garlic and 1/4 cp of butter/margarine
3. Drain the claims, reserving 2 tblsp of the juice
4. Add the claims and reserved clam juice to the
cooked mushroom stems.
5. Add the breadcrumbs and remaining ingredients
6. Brush the remaining butter on the mushroom caps
7. Place the mushroom caps, open side up, on a
lightly greased baking or cookie sheet
8. Spoon the stem stuffing evenly into the mushroom
caps
9. Broil the stuffed mushrooms 5 inches from heat
for appx 10 minutes or until lightly browned,
WATCHING THEM CONSTANTLY WHILE
BROILING.
