PINEAPPLE CHICKEN BREASTS (Paul Martin)

Ingredients

  • 2 tablespoons of butter
  • 4 chicken breasts
  • salt and pepper
  • 1 ½ cup of celery (cut and sliced)
  • 4 pineapple slices
  • 1 cup of cut red pepper
  • ½ chicken bouillon
  • 3 tablespoons of Tia Maria

Preparation

Step 1

1. Melt butter and sauté chicken breasts.
2. Add salt and pepper, cover and bake for 4 minutes.
3. Turn the breasts, season and cook another 16 minutes, turning every 4 minutes.
4. Take out the chicken and keep warm in the oven.
5. Add celery, pineapple slices and pepper.
6. Add salt and pepper and cook 2-3 minutes.
7. Add bouillon and cook an extra 2 minutes and add to the chicken.
8. Add Tia Maria, set aflame and pour over chicken.
