Ingredients
- 1 (or more) racks of st louis style pork ribs
- Chili Powder
- Salt (sea or kosher if possible)
- Pepper
- Barbeque Sauce (Montgomery Inn is quite nice)
Preparation
Step 1
0. Preheat oven to 250.
1. Place ribs on a rimmed cookie sheet.
2. Sprinkle both sides with chili powder, salt and pepper.
3. Cover with tightly sealed foil.
4. Cook at 250 for 2 hours.
5. Raise heat to 275.
6. Cook for a third hour (total cooking time is 3 hours).
7. Preheat a gas or charcoal grill. Much to my chagrin, charcoal actually gives better flavor.
8. Brush with barbeque sauce and then grill to taste, turning frequently.
