  • 2 packages pound cake mix -- 16 oz.
  • 4 teaspoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 2/3 cup water
  • 1 3/4 cups canned pumpkin
  • 4 eggs
  • STREUSEL TOPPING
  • 1/4 cup brown sugar, packed
  • 3/4 cup nuts -- chopped
  • 1/2 cup flour
  • 1/3 cup margarine -- softened

Preparation

Step 1

Preheat oven to 325. Combine cake mixes, spice and baking soda in a large bowl. Add water, pumpkin and eggs; beat well. Spread half of batter in a greased 13 x 9 pan; sprinkle with half of streusel topping. Carefully spread remaining batter over streusel layer; sprinkle remaining streusel topping over batter. Bake 50 minutes until done.
STREUSEL: Combine brown sugar, nuts and flour. Cut in margarine until crumbly

NOTES : I would make more struesel - it was rather thin with this amount.
