Breakfast: Waffles

beaten egg whites in this recipe make light, fluffy waffles
this is my go-to waffle recipe

Ingredients

  • 1 3/4 c. flour
  • 1 TBSP baking powder
  • 1/4 tsp. salt
  • 2 egg whites
  • 2 egg yolks
  • 1 3/4 c. milk
  • 1/2 c. cooking oil
  • 1 tsp. vanilla (optional)
  • 1/2 to 1 tsp. cinnamon (optional)

Preparation

Step 1

in large mixing bowl, stir together dry ingredients, make well in center

in medium mixing bowl, slightly beat yolks, stir in oil and milk

add egg yolk mixture to dry ingredients, stir until moistened (batter will by lumpy)

in medium bowl, beat egg whites with mixer until stiff

fold egg whites into other mixture, leaving a few fluffs of white, (do not overmix)

pour by ladle into preheated waffle maker, cook until steam is no longer wafting from waffle or until waffle is to desired crispness

may store cooked waffles in cake pan in warm oven until ready for serving
