  • 2 teas. canola oil
  • 2 small carrots, finely diced
  • 2 stalks celery, finely diced
  • 1 small vadalia onion, finely chopped
  • 1 c. mushrooms, chopped
  • 1/4 c. slivered almonds
  • 2 cups instant br. rice
  • 1 can (14.5) reduced sodium, FF chicken broth
  • 1/4 teas. ground black pepper

Preparation

Step 1

HEAT: oil in med. pan
SAUTE: carrots, celery, onion, mushrooms and almonds -3/4 minutes or til they begin to soften.
ADD: remaining ingre. and bring to a boil. Reduce to SIMMER, cover, cook additional 15-20 minutes/til rice is tender.
