brown rice pilaf

prep time: 10 min. Cook time: 25 min.
Per ser: 170 4g fat, 0g sat fat, 130mg sodium, 32g carbs, 5g protein
- 2 teas. canola oil
- 2 small carrots, finely diced
- 2 stalks celery, finely diced
- 1 small vadalia onion, finely chopped
- 1 c. mushrooms, chopped
- 1/4 c. slivered almonds
- 2 cups instant br. rice
- 1 can (14.5) reduced sodium, FF chicken broth
- 1/4 teas. ground black pepper
HEAT: oil in med. pan
SAUTE: carrots, celery, onion, mushrooms and almonds -3/4 minutes or til they begin to soften.
ADD: remaining ingre. and bring to a boil. Reduce to SIMMER, cover, cook additional 15-20 minutes/til rice is tender.
