Poached Chicken

Ingredients

  • 3 lbs. Chicken Breast
  • 5-6 cups chicken broth
  • 2 sprigs fresh thyme
  • 1 small onion halved
  • 1 small carrot halved
  • 1 stalk celery halved
  • 10 sprigs parsley

Preparation

Step 1

Half the chicken breasts and take off the fat.
Put the parsley,thyme,onion,carrot,celery and chicken in medium pan. Cover with broth, and bring just to a boil. Lower heat to low and cover.
Poach the chicken about 20 min. or until firm to the touch.
Remove from heat,uncover and cool chicken in liquid for 30 min.
De-bone and cut into 1" cubes
