Pat's Banana Cake

Ingredients

  • 3 cups shifted cake flour
  • 2 tsp. baking soda
  • 1 cup shortening
  • 2 cups sugar
  • 3/4 cup milk
  • 2 eggs, slightly beaten
  • 1 1/2 cup mashed ripe bananas (about 3 1/2)
  • 1/2 cup chopped pecans (2 oz.)

Preparation

Step 1

1. Sift cake flour and baking soda together.
2. Cream shortening
3. Gradually add sugar to shortening and cream
4. Add 2 Tbs. of the 3/4 cup milk
5. Add the slightly beaten eggs
6. Add dry ingredients and remaining milk alternately, beating thoroughly
7. Fold in mashed bananas and pecans
8. Place mixture in prepared cake pans
