Ingredients
- Cinnamon-Sugar Tortillas:
- 1/2 gallon French vanilla ice cream
- 4 tsp ground cinnamon
- 3 cups cornflakes, coarsely crushed
- vegetable oil
- honey
- sweetened whipped cream
- 1/2 tsp. ground cinnamon
- 1/4 cup sugar
- 4 8 inch flour tortillas, cut into quarters
- vegetable oil
Preparation
Step 1
Shape ice cream into 8 balls. Sprinkle each ice cream ball with cinnamon and roll in crushed corn flakes. Place on cookie sheet and freeze until very hard. Chill serving bowls. Heat enough oil in deep fat fryer to cover ice cream balls. Heat to 375 degrees and fry each ball, one at a time, for 3-5 seconds. Serve immediately after frying topped with honey, whipped cream and a sprinkle of ground cinnamon. Serve with Cinnamon-Sugar Tortillas.
Cinnamon-sugar tortillas:
In a small bowl, combine cinnamon and sugar and mix well. In a large skillet, heat 1/2 inch of oil over medium heat until haze forms. Fry tortilla quarters, a few at a time, for 1 minute or until golden. Drain on paper towels and sprinkle with the cinnamon-sugar mixture.
