Irish Colcannon with Bacon

Ingredients

  • 1 1/2 lb. potatoes (about 4 large), peeled, quartered
  • 3 slices bacon, chopped
  • 1 small onion, chopped
  • 1/2 cup water
  • 3/4 lb. cabbage, thinly sliced (about 4 cups)
  • 2 Tablespoon butter
  • 1/2 cup milk, warmed
  • 1/2 teaspoon salt

Preparation

Step 1

PLACE potatoes in Dutch oven or large saucepan. Add enough cold water to cover potatoes. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 20 min. or until potatoes are tender.

MEANWHILE, cook bacon in large skillet on medium heat until crisp, stirring occasionally. Remove bacon from skillet with slotted spoon; drain on paper towels. Stir onions into reserved bacon drippings in skillet; cook and stir 2 min. or until crisp-tender. Add 1/2 cup water; stir to release browned bits from bottom of skillet. Add cabbage; mix well. Cover; cook 7 min. or until cabbage is tender and water has evaporated, stirring occasionally.

DRAIN potatoes; return to saucepan. Add butter. Mash potatoes until creamy, gradually adding milk. Add cabbage mixture, bacon and salt; stir until well blended.

I brought this to a Global Potluck, and it was great! Enought to go around.

Much better than ordinary mashed potatoes. I would also add more bacon, and perhaps add chicken bouillon to the cooking water because I felt like taste was just slightly bland. I still felt this was a great and unusual recipe.

My husband was skeptical, so I made regular potatoes and this to see which my family preferred. This recipe was gone and asked for every night that week. Will definitely make again, only I will add more bacon like the others suggested. But all in all, it was great.

Very good. Made it for a potluck and it was very popular. The combination of potatoes, cabbage, and bacon is delicious.

I added a 1/4 cup of parmesan cheese, YUM!

The potatoes were very creamy. I don't typically like to mix vegetables in my potatoes, but I had to make this for St. Patrick's day.

I made this for my extended family so they could experience an authentic Irish meal. They thought it was really good and want me to make it again. This may just become an annual St. Patrick's Day dish in my family!

Absolutely loved this recipe! Reminds me of an hungarian dish my ex's mother used to make. Next time I make this I plan on adding Polska Kielbasa (or a sausage that is similar) to it and it will make it a casserole like dish.

The bacon makes this side dish very flavorful. Good for St. Patrick's Day and any hearty meat entree.

This was a great variation on mashed potatoes as well as cooked cabbage. I liked the combination much better than cabbage alone. The bacon was a really good flavor, too. we had it with corned beef on St. Patrick's Day.

This was a good twist on fried cabbage and mashed potatoes. Mixing them together was an interesting idea. I thought it was okay but didn't care for the bacon. My husband liked it quite a bit and had two big servings. I would think about adding some cheese next time.

I had a recipe for this that used leeks. It came out wonderful and the entire family loved it. Great new addition if you like authentic Irish dishes.
