  • Finely grated rind of one lemon
  • 3 tblsp of lemon juice
  • 2 lbs cream cheese room temp
  • 1 tsp vanila
  • 13/4 cups sugar
  • 4 eggs



Step 1

Rack at lwest position. Oven at 350*
butter inside of pan and rim
Round three inch deep 8 in pan
Mix rind and juice. Set aside
Beat creamcheese w/sugar until smooth
Beat in vanila and eggs one t a time
Stop beating immed after last egg..fold in lemon juice and rind
Spray buttered pan with pam
Turn batter into prepared pan and level top by rotating gently
Place cake intompan of water
Bake for 11/2 hrs
Cool 21/2 to 3 hrswhen cooled, cover cake w/plastic wrap and invert onto plate.invert agin .peel off plastic .refrigerate. Can be fozen and defrosted
